Thank you to everyone who came down for our summer couscous at Harland Cafe in May. So what if the it was grey and a bit cold outside, the fantastic menu (about 15 different dishes per table!) and company kept everyone warm and happy.
The feedback from the evening was amazing, with thumbs up going to the spicy meatballs, new broad bean hummus, and almond pastries. And, of course, the couscous. We’re looking forward to cooking more authentic Algerian food for Sheffield and beyond.
Absolutely CousCous is having the summer off. Bahia is learning Spanish in Liverpool and Liz has plenty of other stuff on. But we’ll be back in the autumn. So please watch this space or better yet, like us on facebook for updates.

We’ve created a delicious kemia menu for the new season, with a twist for our favourite food.
Absolutely CousCous regulars know we normally serve our couscous warm, and accompany it with hot stews and tagines. But in the summer in Algeria, people love their couscous mesfouf. The same comforting wee rolled balls of wheat, steamed twice – but enjoyed at room temperature with teeny pieces of onion and carrot, and served with plain yogurt.
We’ll be serving couscous mesfouf with lots of other uniquely north African dishes (see the full summer menu) including:
- H’mis — a classic Algerian grilled pepper and tomato salsa
- Hummus — creamy pulse dip with tahini, garlic and lemon
- Batengel kemia — smoked aubergine dip
- Kargha mercharmla — grilled and marinated courgettes topped with tomatoes
- Tabikha — broad beans, peas, artichokes and fresh coriander
- Salata Zroudia — spiced carrot salad
- Mtwam — garlicky little lamb meatballs slowly cooked in a rich tomato sauce
If the evening is warm, you can sit out in Harland Cafe’s courtyard. And you never know, we might go mad and serve your pastries with the fresh mint tea iced!

Algerian food is fresh, spicy and unique – and couscous is at the core of any meal. The comforting teeny rolled balls of wheat are usually accompanied by a vegetable sauce called a merka. And then there are the delicious tagines and stews: lamb and prune, chicken, lemon and olives, squashes and dried fruit… the list goes on.
And we’ve not even mentioned the gorgeous sweet and fragrant pastries – often made with almonds, honey, oranges and delicate rosewater. Or the classic fresh mint tea perfect for aiding digestion.
